It’s Sunday nite din din and I felt like something vegetarian. I crave veggies a lot and always keep them in my fridge. This is my ‘Eggplant Lasagna’. No noodles, it’s stacked roasted eggplant, fresh basil, fresh mozzerella, sauteed garlic spinach and arugula over a homemade panfried patty of panko, fresh parmigiano reggiano and eggs and topped with my homemade tomato sauce. It’s my rendition off a recipe I saw years ago in Gourmet magazine that I loved.
Super healthy, super fresh, organic and allergy-free for me! Nothing beats waking up on a Monday morning not stuffed from Sunday night’s dinner. Recipe to follow soon.
