Serves 2 to 4

ingredients
- 1 pound Okra, also known as Lady Fingers, sliced lengthwise
- 4 Roma tomatoes, diced
- 1 yellow onion, diced
- 2 Serrano or green chilies
- 1 tablespoon garam masala
- ½ teaspoon garlic paste
- ½ teaspoon ginger paste
- 1 teaspoon red chili powder
- 3 tablespoons vegetable oil
- ½ bunch cilantro, finely chopped
- Salt to taste
- 1 fresh bay leaf
- 1 sprinkle asafetida
instructions
Heat oil in a pan. When oil is hot add bay leaf and sprinkle of asafetida. After a minute add onions and fry them until soft and light brown. Add the chopped Serrano chilies, ginger and garlic pastes and stir-fry for one minute. Add ½ tablespoon of garam masala and continue to stir-fry for additional 2 minutes. Mix in okra, tomatoes, red chili powder and salt, cover the pan and cook for a few minutes until tomatoes become soft. Stir occasionally and make sure the okra does not stick to the pan. Keep on heat for two more minutes and then remove the pan. Sprinkle another ½ tablespoon of garam masala on top. Garnish with cilantro and serve hot.
